How to Make the Best Pork Gyoza
Growing up, I always adored the comforting taste of pork gyoza. Now, I as have gotten older I have grown to appreciate the meticulous skill that comes into preparing such a dish.
This is my grandmother’s recipe that I loved when I was younger. while there is nothing fancy about it, there is beauty in its simplicity.
Filling:
1 1/2 cups green cabbage, very finely chopped
1 tsp salt, separated
1 lb / 500g ground pork (mince) (fattier the better)
1 cup garlic chives, finely chopped (Note 1)
1 garlic cloves, crushed
1 tsp ginger, grated
1 tsp sesame oil
1 tbsp cornstarch / corn flour
2 tsp soy sauce
Combine cabbage and salt and let sit for 20 minutes so the cabbage wilts slightly. Mix the rest of the filling ingredients and use your hands to combine.
Wrapping:
1 tsp cornflour (cornstarch) – for tray
40 – 45 round wonton (gyoza) wrappers (Gow Gee wrappers) – 1 1/2 packets (Note 2)
3 tbsp vegetable oil (or other cooking oil)
Place a gyoza wrapper in your in your nondominant hands’ palm. Wet your finger and use it to wet half the edge of the wrapper. Add about 1TB of filling in the wrapper. Fold the wrapper and create four pleats and press to seal. Place on tray and repeat for the remaining wrappers.

The result is a savoury and juicy mixture inside a thin flour pastry wrapper. Often dipped in a tangy and salty sauce, it is no wonder pork gyoza is so popular across countries!
